It's soup season!! We’ve put together this deliciously healthy and hearty recipe for you to enjoy from the comfort of your cozy home on a cold, rainy day. Here’s what you’ll need:
Ingredients
1 head broccoli
1 can coconut milk (rich)
1Tbsp coriander, chopped
2 cups veggie/chicken stock
2 tsp crushed garlic
1 medium onion, chopped
0.5 tsp chopped ginger, fresh
Olive or avocado oil
Fresh herb blend of choice (optional)
Croutons (optional)
Instructions
In a saucepan on medium heat, sauté the onions, garlic and ginger in some olive until fragrant.
In a separate pot, bring some water to boil and blanch the broccoli for 2-5 minutes in the boiling water, then strain.
Add the stock, coconut milk and broccoli to the saucepan with the onions in it. Bring to a soft boil.
Pour entire mixture into a blender, add salt, pepper and any other spices to taste. Blend until creamy.
Serve and garnish with your favorite croutons and herbs.
